Israeli Company Combats Overfishing with Non-Fish Salmon Alternative

Although salmon remains one of the most popular fish in the world, it is becoming an increasingly problematic dish for the pocketbook and the environment.

Overfishing depletes supplies of salmon and other kinds of fish, while fish farms often result in unhealthy fish and environmental waste.

Ofek Ron, co-founder and CEO of Israeli food tech company Oshi, has developed a guilt-free version of salmon that is delicious, nutritious, and is good for the planet.

Although plant-based alternatives for burgers and chicken abound, Ron said there was a need to re-create the subtle flavor and texture of salmon.

Salmon’s flakes and fat lines make it difficult to imitate, but after three years, Oshi has developed a plant-based salmon that tastes and flakes like the real thing.

The vegan salmon is made with mycoprotein, a mycelium-based protein that provides nutrients.
